A taste of the Tropics

On the 6th day of Christmas my true love gave to me:
A delicious tropical meal perfect during the festive season and our wonderful summer
Salmon Kebabs with Mango and avocado salad with sweet chilli dressing
Meal is 9PP
I purchased the Salmon Kebabs with roasted peppers and garlic from Woolworths @ 6 PP per serve that my husband cooked on the barbie while I whipped up this delicious salad from Dec Weight Watchers Magazine.
The salads in this issue are delicious.
Salad is 3PP and serves 6
1/4 cup sweet chilli sauce
2 tbs lime juice
100 g baby lettuce leaves (I used baby spinach)
1 Lebanese cucumber, cut into ribbons. (I diced it).
1 small avocado, coarsely chopped
1 small mango, thinly sliced
2/3 cup fresh coriander leaves
1/3 cup toasted macadamia nuts, coarsely chopped

1. To make the sweet chilli dressing, combine the chilli sauce with the lime juice in a small bowl.
2. Arrange the lettuce, cucumber, avocado, mango, coriander and nuts on a large platter, then drizzle with the dressing and serve immediately.

Salad can also be turned into a main meal by adding 500g peeled, cooked prawns @ 4PP for meal or 300g cooked and shredded, skinless chicken @ 11PP for meal.

This salad was really delicious.

Mmmmm a nip of Baileys

On the 5th day of Christmas my true love gave to me:
The normal Baileys is 3PP a nip and this is only 2PP a nip.
WW Baileys
2PP @  140 servings
800g Light sweetened condensed milk
9 eggs
1200ml Light Cream
700ml Scotch
6 tablespoons diet chocolate topping (diet caramel may be substituted to make cowboys)
Empty bottles: Makes approx 2,800mls

Instructions:
You will need a large bowl/pot as this makes a large quantity.
1. Beat eggs until smooth.
2. Add Condensed milk, cream and scotch.
3. Mix well, add chocolate topping to taste.
4. Pour into bottles and refrigerate.
5. Turn bottles regularly. It gets better with age.The Scotch keeps the cream. Can become quite thick.

Strawberry Toparie

On the fourth day of Christmas my true love gave to me (early as I have training all day tomorrow)

A Strawberry Toparie:
For a great centerpiece on the Christmas Dining Table this year why not take advantage of the free fruit. I am making a Strawberry Toparie. 
To do it all you need is a florist cone lots of strawberries and toothpicks. 
Insert your toothpick into the strawberry and attach it to the cone.Start at teh bottom and keep going until you reach the top. 
For a little extra something you could add melted white chocolate over each strawberry for a snow like effect, or milk chocolate. Or decorate as I have shown you above by covering in dipping in various types of chocolate. 
You would need to calculate the chocolate but other than that its something that will look great and help you stay within your allowance on Christmas Day! Enjoy

On the first day of Christmas

My true love gave to me....
A delicious Christmas cake recipe that has been ProPointed.

Mocha Fruitcake
serves 20
ProPoints per serve 6
Prep: 10 minutes (plus overnight soaking time)
Cooking: 40 minutes

Ingredients

dried mixed fruit 1kg
strong coffee 2 cups (500ml)
self-raising flour 2 cups (300g) sifted
fruit and nut chocolate 150g, chopped

  1. Place fruit and hot coffee in a large heatproof bowl, cover and set aside to soak overnight.
  2. Preheat oven to 160C, line the base and two long sides of a 18cm x 28cm lamington tin with non-stick baking paper.
  3. Add flour and chocolate to fruit mixture and stir with a wooden spoon until well combined.  Spread evenly into prepared tin, place in preheated oven and bake for 40 minutes or until skewer inserted into the centre comes out cleanly.
  4. Remove and set aside in the tin on a wire rack to cool completely.
This is out of the Secrets of Success cookbook.  It is one of the easiest and yummiest fruit cakes you will ever make.

When life gives you lemons....

Life can be very messy. It does get in the way. Without going into unnecessary detail I have been suffering from some health issues for the last six weeks or so and am not able to exercise under medical directions. I love my exercise, it keeps me sane and makes me feel so good. I have been petrified I will wake up one morning and be back at 44kg heavier. I started the new ProPoint plan as soon as I got back from Sydney's Leader's seminar with so much enthusiasm and lost 1.5kg the first week. Second week .5kg. Third week was my birthday at Airlie and eating out every meal and indulging in cocktails so a stay the same. (WOW, usually this would have been at least 1kg gain) . Gradually I was feeling worse and worse though and finally caved and visited the DR. Many tests and pokes and scans later have found the problem and am receiving treatment.
I was still planning every week my menu, drinking all my water, and using my weekly PP if needed, but limited to one meal out. I felt a fraud in a way the week of the launch as I really wanted to get up and share with members I made it. I finally got to my personal goal through our wonderful new ProPoint plan. I am at goal. I started PP at goal. However I still yearn for those elusive 4 or 5 kg to be gone. So I was gutted that life got in the way.

This is one beautiful lady inside and out. I just had to steal her line, if life gives you lemons make WW ProPoint lemonade. Yes, this is what it is all about. I haven't gained heaps of weight (Yet) and I do think it is due to the new program as I have the extra 49 up my sleeve. Not exercising usually means gain big time to me, but this is what is making the difference.
I am very passionate about this program.AND when I get the ok and am back exercising, I will get to my happy weight with ProPoints!
