On the first day of Christmas

My true love gave to me....
A delicious Christmas cake recipe that has been ProPointed.

Mocha Fruitcake
serves 20
ProPoints per serve 6
Prep: 10 minutes (plus overnight soaking time)
Cooking: 40 minutes

Ingredients

dried mixed fruit 1kg
strong coffee 2 cups (500ml)
self-raising flour 2 cups (300g) sifted
fruit and nut chocolate 150g, chopped

  1. Place fruit and hot coffee in a large heatproof bowl, cover and set aside to soak overnight.
  2. Preheat oven to 160C, line the base and two long sides of a 18cm x 28cm lamington tin with non-stick baking paper.
  3. Add flour and chocolate to fruit mixture and stir with a wooden spoon until well combined.  Spread evenly into prepared tin, place in preheated oven and bake for 40 minutes or until skewer inserted into the centre comes out cleanly.
  4. Remove and set aside in the tin on a wire rack to cool completely.
This is out of the Secrets of Success cookbook.  It is one of the easiest and yummiest fruit cakes you will ever make.

  2. Hi Christina, I've been wondering if you've been around. Yes, this is good, and so easy. I have done that many times when leaving a comment and then mid I can't back in sometimes. Your market stall looked very pretty... and YUM.
